About Thomas
Pastry chef for almost 25 years, I have been able to explore almost all the facets of this fascinating field of pastry.
For me, pastry is a real Art, whether visually with a perfect finish, technically, or the blending of flavors.
I like to transmit my passion, the love of quality ingredients and a job well done.
But sometimes I just want to feel the pleasure of working with a living material, to feel a biscuit sing under the palette, to observe the crystallization of chocolate, the cooking of a fruit paste, or just to smell the smell of a pie. out of the oven. Pastry is also sometimes simply an awakening of the senses or a return to childhood.
It's all these exciting facets of my job that I like to pass on to my students.
